{"id":880,"date":"2022-05-14T13:42:38","date_gmt":"2022-05-14T11:42:38","guid":{"rendered":"http:\/\/www.giselecooking.com\/?p=880"},"modified":"2022-05-14T13:42:39","modified_gmt":"2022-05-14T11:42:39","slug":"queue-de-boeuf-au-gombo","status":"publish","type":"post","link":"https:\/\/www.giselecooking.com\/index.php\/2022\/05\/14\/queue-de-boeuf-au-gombo\/","title":{"rendered":"QUEUE DE BOEUF AU GOMBO"},"content":{"rendered":"\n<p><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>860g de queue de b\u0153uf<\/li><li>100g de gombo (dongo-dongo, okra)<\/li><\/ul>\n\n\n\n<p><strong>*Pour la pr\u00e9cuisson<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 oignon coup\u00e9 grossi\u00e8rement<\/li><li>2 gousses d&rsquo;ail coup\u00e9es grossi\u00e8rement<\/li><li>J&rsquo;ai mis 1c\u00e0s d&rsquo;un reste de mixture oignon\/ail\/persil<\/li><li>Sel<\/li><li>1 feuille de laurier<\/li><\/ul>\n\n\n\n<p><strong>*Pour la sauce<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Huile d&rsquo;olive ou huile remont\u00e9e \u00e0 la surface du bouillon apr\u00e8s pr\u00e9cuisson<\/li><li>1 grosse tomate fra\u00eeche coup\u00e9e en d\u00e9s ou 1\/2 boite de tomate concass\u00e9e<\/li><li>1 oignon cisel\u00e9<\/li><li>1 c\u00e0c de pur\u00e9e d&rsquo;ail<\/li><li>2 jeunes oignons \u00e9minc\u00e9s<\/li><li>2 cubes agneau Knorr ou sel<\/li><li>1c\u00e0c de muscade<\/li><li>1 feuilles de laurier<\/li><li>1 piment<\/li><\/ul>\n\n\n\n<p><strong>PREPARATION<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Lavez la viande \u00e0 l&rsquo;eau chaude, \u00e9gouttez et placez-la dans une casserole avec tous les ingr\u00e9dients de la pr\u00e9cuisson. Portez \u00e0 \u00e9bullition et laissez cuire pendant 2h ou jusqu&rsquo;\u00e0 ce que la viande soit bien tendre.<\/li><li>Retirez les morceaux de viande de la casserole et r\u00e9servez de c\u00f4t\u00e9. Filtrez et r\u00e9cup\u00e9rez le bouillon liquide dans un autre r\u00e9cipient. La queue de b\u0153uf est une viande grasse. Vous n&rsquo;aurez pas besoin d&rsquo;huile en plus car vous allez r\u00e9cup\u00e9rer \u00e0 l&rsquo;aide d&rsquo;une cuill\u00e8re toute l&rsquo;huile remont\u00e9e \u00e0 la surface de votre bouillon.<\/li><li>Chauffez cette huile. Ensuite faites une sauce tomate avec l&rsquo;oignon, l&rsquo;ail, et la tomate. Assaisonnez de sel et\/ou 2 cubes de bouillon d&rsquo;agneau, muscade. Laissez mijoter la sauce. Une fois la sauce cuite, ajoutez les morceaux de viande dans la casserole, le bouillon liquide et un peu d&rsquo;eau si besoin. Laissez mijoter sur feu moyen jusqu&rsquo;\u00e0 r\u00e9duction de la sauce.<\/li><li>Pendant que la sauce cuit, lavez vos gombos. Coupez les 2 bouts ensuite coupez-les en rondelles.<\/li><li>Les 15 derni\u00e8res minutes, lorsque la sauce \u00e0 suffisamment r\u00e9duit, rajoutez les gombos. Ne m\u00e9langez pas. Laissez-les doucement cuire \u00e0 la surface sans couvrir la casserole. De cette mani\u00e8re ils garderont une belle couleur. Il ne faut pas les cuire plus longtemps que15 minutes sinon ils seront tr\u00e8s visqueux\/gluants. D\u00e8s qu&rsquo;ils ramollissent, coupez le feu. Vous pouvez ajouter le piment \u00e9galement en fin de cuisson.
